#25 The Bean Cookbook, A Celebration of the Delicious Legume

Lauren suggested this post, her Mom Linda, is famous for her Frito Bean Salad. It is a work of art and we look forward to it every time we visit Kansas. It has a wonderful balance of flavors, cheese, onions, lettuce, tomatoes, red French dressing, beans and of course, Fritos. They're a salty corn chip that we can't get here in Canada so naturally what you can't have, you really, really crave. We always bring a supply home when anyone takes a trip down south.

We try so hard to duplicate Linda's beautiful salad but it always pales in comparison. She just has that special touch when it comes to crushing the chips, see photo. Some people over crush because it is fun, you get to smash them right in the bag. Linda holds back a bit and leaves a few almost whole, brilliant! Of course it wouldn't be Frito BEAN salad without the beans and traditionally Ranch Style beans are used. We can't get those up here either or Rotel canned tomatoes or Twinkies or lots of other stuff, but don't get me started. That will be another post someday.
